Whilst we all may be enjoying this fantastic summer heatwave, we still need to stay cool and keep ourselves and our loved ones hydrated. There is no better way to stay hydrated and cool than with these scrumptious recipes. There is a fresh and delicious smoothie full of fruit which is also dairy free. Our cool soup Gazpacho recipe comes from Mark Hartstone from La Fosse in Cranborne and finally, we have a tasty margarita recipe, perfect for entertaining and enjoying the summer sun.
Fruit Summer Smoothie
Ingredients
1 cup of fresh strawberries 3 frozen bananas 1 cup of frozen or fresh mango 1 cup of almond milk or filtered water Handful of ice Sprig of mint to garnish
Method
1. In a blender, add the strawberries, mango and banana and blend until smooth.
2. Add in the almond milk or filtered water and ice.
3. Blend together until all of the ingredients are combined.
4. Serve in a tall glass with a piece of strawberry and a sprig of mint to garnish.
Gazpacho Recipe by Mark Hartstone
Gazpacho is a fantastic chilled tomato soup that we occasionally have on the menu at La Fosse at Cranborne. It is a very simple dish but so refreshing in this heat. If you like the recipe but still do not have the time or inclination to make it La Fosse at Cranborne is having a Tomatina Spanish Supper Club Night on Wednesday 18th July.
Ingredients
2 peeled cucumbers (do not bother to peel if you are not bothered by appearance, the green makes it brown in colour) 1.2kg ripe tomatoes 2 roughly chopped red onions 2 crushed garlic cloves 3 slices of stale bread Large dash of sherry vinegar, do this to taste, as the acidity and sweetness of tomatoes varies greatly 60ml olive oil Seasoning 4 peppers Method
1. Put all the ingredients in a blender or use a hand blender to blitz.
2. Leave overnight to chill in the fridge. Serve with croutons.
A Few Tips
- Remember it contains bread, so not for coeliacs, unless you substitute gluten free bread.
- A good quality sherry vinegar and olive oil are the making of this dish.
- Very ripe flavoursome tomatoes are a must.
- Isle of Wight tomato juice added to your gazpacho will make it go further!
- Give it a twist and use yellow tomatoes and yellow peppers for a vibrant yellow colour.
- Do not be tempted to bulk it out with cheap tinned tomato, you will taste it.
- Sour dough real bread from the likes of Orchard Bay Bakery or Oxfords will give it a better depth of flavour.
Margarita Recipe
Ingredients
2 oz Tequila 1 oz Cointreau (Triple Sec if you prefer) 1 oz Lime juice Crushed ice Salt Lime segment for garnish
Method
1. In drinks maker or cocktail shaker add the Tequila, lime juice and Cointreau and mix well.
2. Dampen the rim of the glass in water, then dip into salt to frost the rim.
3. Add the crushed ice to the cocktail glass and pour over the tequila mix.
4. Garnish with a segment of lime and serve.
