Global GF Series Knives - The GF Series is a classic collection of larger, drop forged knives
Crafted in Japan from Cromova18 stainless steel, the Global Classic GF-31 is a fully forged boning knife designed by Komin Yamada.
With a Rockwell hardness of C56-58 and an acute 15-degree cutting edge, this knife is ideal for precise tasks like separating meat from fish skin. The added bolster provides extra hand protection, making it perfect for professional chefs who require durability and safety.
While less flexible than other boning knives, the GF-31 offers enhanced strength for frequent use.
