Once the water starts to boil a vacuum is created and the water is pulled up into the top brew unit saturating the coffee grounds. As soon as all the water has been forced up through the siphon the heating element automatically switches off releasing the vacuum that has been produced. Gravity then pulls the coffee back down into the carafe. Remove the brew unit, which can be placed into its stand, swap over the lid and you are ready to serve. The end result is a complex yet velvety coffee that has to be tried to be believed.
